Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, whisk together olive oil, soy sauce, red wine vinegar, minced garlic, chopped rosemary, black pepper, salt, and paprika until well combined.

  2. 2

    Marinate the Meat

Place the tri-tip roast in a large resealable plastic bag or a shallow dish. Pour the marinade over the roast, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours or overnight for maximum flavor.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 4

    Grill the Tri-Tip

Remove the tri-tip from the marinade and let it come to room temperature for about 30 minutes. Place the tri-tip on the grill and sear for 5-7 minutes on each side to develop a nice crust.

  3. 5

    Lower Heat and Cook Through

After searing, move the tri-tip to a cooler part of the grill, reduce the heat to medium, and close the lid. Cook for an additional 20-30 minutes, or until a meat thermometer reads 130°F (54°C) for medium-rare or 145°F (63°C) for medium.

  4. 6

    Rest the Meat

Once cooked to your desired doneness, remove the tri-tip from the grill and let it rest for at least 10 minutes before slicing.

  5. 7

    Slice and Serve

Slice the tri-tip against the grain into thin slices. Optionally, sprinkle with chopped parsley before serving.
