Brisket

Method

Preparation

  1. 1

    Prepare the Rub

In a medium bowl, combine kosher salt, black pepper, garlic powder, onion powder, smoked paprika, brown sugar, and mustard powder. Mix well.

  2. 2

    Season the Brisket

Place the beef brisket on a large cutting board. Rub the spice mixture all over the brisket, ensuring it is evenly coated. Allow it to sit at room temperature for about 1 hour or refrigerate overnight for deeper flavor.

Smoking

  1. 3

    Prepare the Smoker

Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Once preheated, add the soaked wood chips to the smoker.

  2. 4

    Smoke the Brisket

Place the seasoned brisket in the smoker fat side up. Insert a meat thermometer into the thickest part of the brisket. Smoke for approximately 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

  3. 5

    Baste the Brisket

In a bowl, combine beef broth and apple cider vinegar. Every hour, baste the brisket with the mixture to keep it moist.

Finishing

  1. 6

    Rest the Brisket

Once the brisket reaches the desired temperature, remove it from the smoker and wrap it in aluminum foil. Allow it to rest for 30-60 minutes before slicing.

  2. 7

    Slice and Serve

After resting, slice the brisket against the grain into thin slices. Serve with your favorite BBQ sauce and sides.
