Brisket

Wood Chips

Method

Preparation

  1. 1

    Prepare the Brisket

Trim the brisket of excess fat, leaving about 1/4 inch of fat on top for flavor and moisture.

  2. 2

    Make the Rub

In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to create the rub.

  3. 3

    Season the Brisket

Rub the spice mixture all over the brisket, ensuring it is evenly coated. Let it sit at room temperature for about 30 minutes.

Smoking

  1. 4

    Prepare the Smoker

Soak hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

  2. 5

    Smoke the Brisket

Place the brisket in the smoker fat-side up. Add the soaked wood chips to the smoker box according to manufacturer instructions. Smoke for approximately 10-12 hours, or until the internal temperature reaches 195°F (91°C).

Finishing

  1. 6

    Rest the Brisket

Once the brisket reaches the desired temperature, remove it from the smoker and wrap it in aluminum foil. Let it rest for at least 1 hour.

  2. 7

    Slice and Serve

Slice the brisket against the grain into thin slices. Serve with your favorite barbecue sauce and sides.
