Trim the brisket of excess fat, leaving about 1/4 inch of fat on top for flavor and moisture.

In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to create the rub.

Rub the spice mixture all over the brisket, ensuring it is evenly coated. Let it sit at room temperature for about 30 minutes.
Smoking

Prepare the Smoker
Soak hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).
