Preparation

    Prepare the Chicken

    Rinse the chicken pieces under cold water and pat them dry with paper towels.

    Make the Marinade

    In a bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper.

    Marinate the Chicken

    Rub the marinade all over the chicken pieces, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 1 hour, preferably overnight.

Smoking the Chicken

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes before using them. Preheat your smoker to a temperature of 225°F (107°C).

    Drain the soaked wood chips and add them to the smoker box or directly onto the coals if using a charcoal smoker.

    Place the marinated chicken pieces in the smoker. Close the lid and smoke for about 2 to 3 hours, or until the internal temperature of the chicken reaches 165°F (74°C).
