    Prepare the Fruit

    In a medium bowl, combine the mixed berries, granulated sugar, and lemon juice. Toss gently to coat the berries and allow the mixture to sit for about 15 minutes, so the berries release their juices.

Cake Layer

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    Mix Dry Ingredients

    In a bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Set aside.

    Cream Butter and Sugar

    In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

    Add Eggs and Vanilla

    Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.

    Combine Wet and Dry Ingredients

    Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

    Bake the Cake

    Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

    Make Whipped Cream

    In a mixing bowl, pour the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form, about 3-5 minutes. Be careful not to overwhip.

Assembly

    Assemble the Dessert

    Once the cake has cooled, slice it in half horizontally. Place one layer on a serving plate, spoon half of the berry mixture over it, followed by a layer of whipped cream. Place the second cake layer on top, repeat with the remaining berries and whipped cream. Garnish with additional berries if desired.
