Preparing the Ribs

Prepare the Ribs
Remove the membrane from the back of the baby back ribs. This will allow the spices to penetrate better.

Season the Ribs
In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Rub this seasoning mix all over the ribs, ensuring they are well coated.
Making the Glaze

Combine Glaze Ingredients
In a saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, mustard, garlic powder, black pepper, salt, and smoked paprika. Stir well to combine.

Cook the Glaze
Heat the saucepan over medium heat and bring to a simmer. Cook for about 5-10 minutes until the mixture thickens slightly. Remove from heat and set aside.
Smoking the Ribs

Preheat the Smoker
Preheat your smoker to 225°F (107°C). Use your choice of wood chips for smoking, such as hickory or applewood.

Smoke the Ribs
Place the seasoned ribs in the smoker bone-side down. Smoke for approximately 3 hours.

Finish Cooking
Remove the ribs from the smoker and let them rest for 10-15 minutes before slicing.
