Nilla Wafer Crumble

Whipped Cream Topping

Method

Prepare the Pudding Base

  1. 1

    Combine Dry Ingredients

In a medium saucepan, whisk together the granulated sugar, flour, and salt until well combined.

  2. 2

    Add Milk

Gradually whisk in the milk until no lumps remain. Heat the mixture over medium heat, stirring constantly until it thickens and begins to bubble.

  3. 3

    Temper the Egg Yolks

In a separate bowl, lightly beat the egg yolks. Once the pudding is thickened, slowly add a few tablespoons of the hot pudding mixture into the egg yolks, whisking constantly to temper them.

  4. 4

    Combine and Cook

Pour the tempered yolk mixture back into the saucepan with the pudding. Continue to cook for another 2-3 minutes, stirring constantly. Remove from heat and stir in the vanilla extract and butter until smooth.

Prepare the Banana Layer

  1. 5

    Slice Bananas

Peel and slice the ripe bananas into approximately 1/4 inch thick rounds.

Prepare the Nilla Wafer Crumble

  1. 6

    Crush Nilla Wafers

Place Nilla Wafers in a resealable plastic bag and crush them using a rolling pin or your hands until they resemble coarse crumbs.

Prepare the Whipped Cream Topping

  1. 7

    Whip the Cream

In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Use an electric mixer to whip the mixture until soft peaks form.

Assemble the Banana Pudding

  1. 8

    Layer the Ingredients

In a 9x13 inch dish, spread a layer of the pudding base on the bottom, followed by a layer of banana slices, and a sprinkle of crushed Nilla Wafers. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.

  2. 9

    Top with Whipped Cream

Spread the whipped cream topping over the final layer of pudding. Garnish with any remaining Nilla Wafer crumbs and banana slices if desired.
