Fruit Filling

Method

Prepare the Fruit Filling

  1. 1

    Mix the Fruit

In a large mixing bowl, combine the fresh seasonal fruits, granulated sugar, lemon juice, cornstarch, and ground cinnamon. Gently toss until the fruits are evenly coated with the mixture.

  2. 2

    Set Aside

Let the fruit mixture sit for 15 minutes to allow the juices to develop.

Make the Cake Topping

  1. 3

    Preheat the Oven

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.

  2. 4

    Combine Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 5

    Add Wet Ingredients

In another bowl, mix the melted butter, milk, and vanilla extract. Pour the wet mixture into the dry ingredients and stir until just combined; do not overmix.

Assemble the Cobbler

  1. 6

    Layer the Fruit

Spread the fruit filling evenly in the greased baking dish.

  2. 7

    Add Cake Topping

Spoon the cake batter over the fruit filling, spreading it out evenly with a spatula.

Bake the Cobbler

  1. 8

    Bake

Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and a toothpick inserted into the cake comes out clean.

Make the Whipped Cream

  1. 9

    Whip the Cream

In a medium bowl, beat the heavy whipping cream with an electric mixer on medium speed until it begins to thicken. Gradually add the powdered sugar and vanilla extract, then continue to whip until soft peaks form.

Serve

  1. 10

    Cool and Serve

Allow the cobbler to cool for about 10 minutes before serving. Spoon warm cobbler into bowls and top with a dollop of whipped cream.
