Prepare the Casings
Soak the pork casings in water for at least 30 minutes to make them pliable. Rinse them thoroughly under cold water to remove any excess salt.

Combine Meats
In a large mixing bowl, combine the ground pork and ground beef. Mix well until the meats are evenly incorporated.

Add Cheese and Peppers
To the meat mixture, add the shredded cheddar cheese and diced jalapeño peppers. Mix until evenly distributed.
