Chocolate Mousse

Melt Chocolate
Chop dark chocolate and melt it in a double boiler or microwave until smooth. Allow to cool slightly.

Whip Cream
In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form, then fold it into the chocolate mixture.

Chill
Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Classic Tiramisu

Prepare Coffee
Brew espresso coffee and let it cool. Add coffee liqueur to the cooled coffee.

Add Mascarpone
Fold in the mascarpone cheese into the egg yolk mixture until smooth.

Dip Ladyfingers
Quickly dip ladyfinger biscuits into the coffee mixture and layer them in a serving dish.

Layer Mixture
Spread half of the mascarpone mixture over the dipped ladyfingers. Repeat layers with remaining ladyfingers and mascarpone mixture.

Chill and Serve
Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.

Preheat Oven
Preheat the oven to 180°C (350°F) and blind bake the shortcrust pastry in a tart pan for about 15 minutes until golden.

Prepare Pastry Cream
Make pastry cream by heating milk, whisking in sugar and cornstarch, and cooking until thick. Allow to cool.

Fill Tart Shell
Once the tart shell is cooled, fill it with pastry cream, smoothing the top with a spatula.

Arrange Fruits
Arrange seasonal fruits on top of the pastry cream in a decorative pattern.

Glaze
Brush the top of the fruits with apricot glaze to give a shiny finish.

Chill and Serve
Refrigerate the tart for at least 1 hour before slicing and serving.
