Method

Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

    Separate the Eggs

    Separate the egg yolks from the whites. In a large bowl, whisk the egg yolks with sugar until pale and creamy.

    Combine Ingredients

    Stir the melted chocolate into the egg yolk mixture. Gently fold in the whipped cream until well combined.

    Whip the Egg Whites

    In another clean bowl, whip the egg whites until stiff peaks form. Gently fold into the chocolate mixture.

    Chill the Mousse

    Pour the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Fruit Tart

    Prepare the Tart

    Place the pre-made tart shell on a serving platter.

    Fill with Pastry Cream

    Pour the pastry cream into the tart shell, smoothing it out evenly.

    Arrange the Fruits

    Slice the assorted fresh fruits and arrange them beautifully on top of the pastry cream.

    Glaze with Apricot Jam

    In a small saucepan, heat the apricot jam until it is liquid. Brush it over the arranged fruits to give a nice glaze.

    Chill and Serve

    Refrigerate the tart for at least 30 minutes before slicing and serving.

Mini Cheesecakes

    Prepare the Crust

    In a bowl, mix the graham cracker crumbs with melted butter. Press this mixture into the bottom of mini cheesecake molds.

    Mix the Cheesecake Filling

    In a large bowl, beat the cream cheese and sugar until smooth. Add in egg yolks, lemon juice, and vanilla extract, mixing until well combined.

    Fill the Molds

    Pour the cheesecake filling over the prepared crusts in the molds.

    Bake the Cheesecakes

    Preheat the oven to 160°C (320°F) and bake the mini cheesecakes for about 15 minutes, or until set.

    Cool and Serve

    Allow the cheesecakes to cool completely before removing from the molds. Chill in the refrigerator for at least 1 hour before serving.
