Method

Preparation

  1. 1

    Boil the Eggs

Place the eggs in a pot and cover them with cold water. Bring the water to a boil over high heat. Once boiling, cover the pot, remove it from the heat, and let it sit for 12-14 minutes.

  2. 2

    Cool the Eggs

After the eggs have finished cooking, transfer them to a bowl of ice water and let them cool for about 5-10 minutes. This will make peeling easier.

  3. 3

    Peel the Eggs

Once cooled, gently tap each egg on a hard surface and peel off the shell under running water for easier removal.

Filling

  1. 4

    Prepare the Filling

Slice each peeled egg in half lengthwise and carefully remove the yolks into a mixing bowl. Add the mayonnaise, yellow mustard, dill pickle relish, crumbled bacon, salt, black pepper, and smoked paprika to the yolks.

  2. 5

    Mix the Filling

Using a fork, mash and mix the yolk mixture until smooth and well combined. Adjust seasoning to taste.

  3. 6

    Fill the Egg Whites

Using a spoon or piping bag, fill each egg white half with the yolk filling. Be generous!

Garnishing

  1. 7

    Garnish the Eggs

Sprinkle the tops of the filled eggs with extra crumbled bacon, a dusting of smoked paprika, and chopped chives for a pop of color and flavor.
