Method

Preparation

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the baking dish

Grease a 9x13 inch baking dish with butter or non-stick spray.

Making the Pudding

  1. 3

    Melt the butter

In a medium saucepan over low heat, melt the stick of unsalted butter. Once melted, remove from heat and set aside.

  2. 4

    Mix wet ingredients

In a large mixing bowl, combine the melted butter, whole milk, eggs, and vanilla extract. Whisk until well blended.

  3. 5

    Combine dry ingredients

In another bowl, mix together the granulated sugar, all-purpose flour, and salt.

  4. 6

    Combine all ingredients

Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Fold in the fresh sweet corn.

  5. 7

    Transfer to baking dish

Pour the corn pudding mixture into the prepared baking dish, spreading it evenly.

Baking

  1. 8

    Bake the pudding

Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

Serving

  1. 9

    Cool and serve

Allow the corn pudding to cool for about 10 minutes before serving. Optionally, top with chopped parsley, grated Parmesan cheese, and black pepper to taste.
