Brisket Preparation

Season the Brisket
In a bowl, mix the salt, black pepper, paprika, garlic powder, onion powder, smoked paprika, and liquid smoke. Rub this mixture all over the brisket.

Smoke the Brisket
Place the seasoned brisket in a smoker preheated to 225°F (107°C) and smoke for about 10-12 hours, or until the internal temperature reaches 195°F (90°C).

Rest and Slice
Once cooked, remove the brisket from the smoker and let it rest for at least 30 minutes. Then, slice it against the grain into bite-sized pieces.
Slaw Preparation

Combine Ingredients
In a large bowl, combine the shredded cabbage, shredded carrot, sliced green onions, and chopped cilantro.

Toss the Slaw
Pour the dressing over the cabbage mixture and toss until everything is well coated. Let sit for 10 minutes to allow flavors to meld.
Taco Assembly

Warm the Tortillas
Heat the corn tortillas on a skillet over medium heat for about 30 seconds on each side until warm and pliable.

Assemble the Tacos
Place a few pieces of sliced brisket on each tortilla. Top with a generous amount of slaw, a dollop of sour cream, and a drizzle of hot sauce.

Serve the brisket tacos immediately, garnished with extra cilantro if desired.
