Prepare the Brisket
Start by trimming the excess fat from the brisket and then rub the entire surface with salt, black pepper, garlic powder, onion powder, and smoked paprika. Ensure the rub is evenly distributed.

Rest the Brisket
Once the brisket has reached the desired temperature, remove it from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

Slice the Brisket
After resting, slice the brisket against the grain into thick slices, about 1/2 inch thick.

Prepare the Sandwich
Take a sandwich bun and place a generous portion of the sliced brisket on the bottom half. Drizzle with BBQ sauce to taste. If desired, add pickles and coleslaw on top.

Assemble and Serve
Cap the sandwich with the top half of the bun, pressing down gently. Serve immediately while warm, with additional BBQ sauce on the side.
