Method
Brisket Preparation
- 1
Prepare the Brisket
Rinse the beef brisket under cold water and pat it dry with paper towels.
- 2
Season the Brisket
In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this spice mixture all over the brisket, ensuring it is evenly coated. Drizzle the Worcestershire sauce over the brisket for added flavor.
- 3
Wrap and Marinate
Wrap the seasoned brisket tightly in plastic wrap and refrigerate for at least 12 hours, preferably overnight, to allow the flavors to penetrate.
Smoking Process
- 4
Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to a temperature of 225°F (107°C).
- 5
Add Wood Chips
Once the smoker is preheated, add the soaked wood chips to the smoker box or directly onto the coals if using a charcoal smoker.
- 6
Smoke the Brisket
Place the brisket on the smoker grates, fat side up. Close the lid and smoke the brisket for approximately 1 to 1.5 hours per pound. For a 5-pound brisket, this will take about 5 to 7.5 hours.
- 7
Check for Doneness
Use a meat thermometer to check the internal temperature of the brisket. It should reach at least 195°F (90°C) for optimal tenderness.
- 8
- 9
Slice and Serve
After resting, slice the brisket against the grain into thin slices. Serve with your choice of sides and enjoy!
