Marinating the Rib Tips

    Prepare the Marinade

    In a bowl, combine 1 cup of BBQ sauce, 2 tablespoons of apple cider vinegar, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of black pepper, and 1 teaspoon of salt. Mix well until all ingredients are blended.

    Marinate the Rib Tips

    Place the 2 lbs of pork rib tips in a resealable plastic bag or a shallow dish. Pour the marinade over the rib tips, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for best flavor.

Smoking and Grilling

    Prepare the Smoker

    Soak 1 cup of hickory wood chips in water for at least 30 minutes. Preheat your smoker to a temperature of 225°F (107°C).

    Smoke the Rib Tips

    Remove the rib tips from the marinade and let them come to room temperature for about 30 minutes. Place the rib tips in the smoker and add the soaked hickory wood chips. Smoke for about 2 hours, or until the internal temperature reaches 165°F (74°C).

    Grill the Rib Tips

    Preheat your grill to medium heat. Once the rib tips are smoked, transfer them to the grill. Grill for about 5-10 minutes on each side, brushing with additional BBQ sauce during the last few minutes of grilling to caramelize the sauce.

    Serve

    Remove the rib tips from the grill and let them rest for about 5 minutes before cutting. Serve with additional BBQ sauce on the side.
