Marinade

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine olive oil, soy sauce, honey, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well until all the ingredients are thoroughly combined.

  2. 2

    Marinate the Chicken

Add the chicken thighs to the bowl with the marinade. Ensure that each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.

Smoking the Chicken

  1. 3

    Prepare the Smoker

Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes before adding them to the smoker.

  2. 4

    Smoke the Chicken

Remove the chicken thighs from the marinade and let the excess drip off. Place the chicken directly on the smoker grates. Add the soaked wood chips to the smoker box or directly on the coals. Smoke the chicken for approximately 2 to 2.5 hours, or until the internal temperature reaches 165°F (74°C).

  3. 5

    Rest and Serve

Once the chicken is smoked, remove it from the smoker and let it rest for about 10 minutes before serving. This allows the juices to redistribute, ensuring tender and juicy chicken.
