Meats

Marinade and Seasoning

Method

Preparation

  1. 1

    Marinate the Meats

In a large bowl, combine chicken thighs, pork ribs, beef brisket, and sausages. Add olive oil, garlic powder, smoked paprika, black pepper, cayenne pepper, and salt to taste. Mix well to ensure all meats are coated with the marinade.

  2. 2

    Let it Rest

Cover the bowl with plastic wrap and let the meats marinate in the refrigerator for at least 1 hour, preferably overnight for enhanced flavor.

Cooking

  1. 3

    Prepare the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and ashed over.

  2. 4

    Grill the Chicken Thighs

Place the marinated chicken thighs on the grill. Cook for about 6-8 minutes on each side, or until the internal temperature reaches 75°C (165°F).

  3. 5

    Grill the Pork Ribs

Place the pork ribs on the grill and cook for about 1.5 to 2 hours, turning occasionally, and basting with BBQ sauce every 30 minutes, until they are tender and the meat pulls away from the bone.

  4. 6

    Grill the Beef Brisket

Place the beef brisket on the grill and cook for about 1.5 to 2 hours, turning occasionally, until it reaches an internal temperature of 90°C (195°F) for tender slicing.

  5. 7

    Grill the Sausages

Place sausages on the grill and cook for about 10-15 minutes, turning occasionally, until they are cooked through and have nice grill marks.

Serving

  1. 8

    Serve the BBQ

Once all meats are cooked, remove them from the grill and let them rest for 5-10 minutes. Slice the brisket, and serve all meats with additional BBQ sauce on the side.
