Prepare the Shrimp
Ensure the shrimp is peeled and deveined. Pat dry with a paper towel and season lightly with salt and black pepper.

Prepare the Tomatoes
If using smoked tomatoes that are not pre-chopped, chop them into smaller pieces for easier incorporation into the dish.
Cooking

Sauté Garlic and Butter
In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Cook the Shrimp
Add the seasoned shrimp to the skillet. Cook for 2-3 minutes on each side or until the shrimp turns pink and opaque.

Add Smoked Tomatoes and Cajun Seasoning
Stir in the smoked tomatoes and Cajun seasoning. Cook for an additional 2-3 minutes to allow the flavors to meld.

Finish with Lemon Juice
Pour in the lemon juice and stir well. Cook for another minute, then remove from heat.

Sprinkle the chopped fresh parsley over the dish and serve with lemon wedges on the side for squeezing over the shrimp.
