    Prepare the Bacon and Shallots

    In a large skillet over medium heat, cook the chopped smoked bacon until crispy. Remove and drain on paper towels. In the same skillet, add sliced shallots and fry until golden brown and crispy. Remove and set aside.

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are translucent.

    Cook the Soup

    Add the diced potatoes and corn kernels to the pot. Pour in the broth and season with salt and black pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as is.

    Serve

    Ladle the soup into bowls, top with fried shallots, crispy bacon, and a dollop of chive crème fraîche. Garnish with fresh chives before serving.
