Cooking Instructions
- 1
Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash the fingerling potatoes thoroughly and cut them in half lengthwise. In a mixing bowl, toss the potatoes with 1 tablespoon of olive oil, salt, black pepper, and half of the fresh rosemary.
- 2
Roast the Potatoes
Spread the seasoned fingerling potatoes on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until golden brown and tender, flipping halfway through.
- 3
Prepare the Salmon
While the potatoes are roasting, season the salmon filet with the remaining tablespoon of olive oil, salt, black pepper, and the rest of the fresh rosemary. Squeeze the juice of half a lemon over the salmon.
- 4
Cook the Salmon
After the potatoes have roasted for 20 minutes, push them to one side of the baking sheet and place the salmon on the other side. Return to the oven and roast for an additional 12-15 minutes or until the salmon flakes easily with a fork.
- 5
Serve
Remove the baking sheet from the oven. Serve the salmon filet alongside the roasted fingerling potatoes, garnished with lemon wedges and fresh rosemary if desired.
