    Make the Special Sauce

    In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, garlic powder, paprika, and salt. Adjust seasoning to taste. Set aside.

    Prepare the Patties

    Divide the ground beef into 4 equal portions (about 4 oz each) and gently form them into balls. Do not overwork the meat.

    Smash and Cook the Patties

    Heat a cast-iron skillet or griddle over medium-high heat. Once hot, add the beef balls, spacing them out. Smash each ball down gently using a spatula to form thin patties. Season with salt and black pepper. Cook for about 2-3 minutes on one side until a crust forms.

    Flip and Add Cheese

    Flip the patties and place a slice of American cheese on each one. Cook for an additional 1-2 minutes until the cheese is melted.

    Toast the Buns

    While the patties are finishing, toast the burger buns on the skillet or griddle until golden brown.

    Assemble the Burgers

    Spread the special sauce on the bottom half of each bun. Layer with lettuce, the smash patties with melted cheese, tomato slices, and pickles. Top with the other half of the bun.
