    Cook the Bacon

    Preheat a skillet over medium heat. Add the bacon slices and cook until crispy. Remove from the skillet and drain on paper towels. While still warm, sprinkle the brown sugar over the bacon to candy it. Set aside.

    Prepare the Green Tomatoes

    Slice the green tomatoes into thick slices. In the same skillet, add a little olive oil and grill the tomato slices for about 2-3 minutes on each side until they are golden and soft. Remove and set aside.

    Caramelize the Onions

    Slice the red onion thinly. In the same skillet, add a bit more olive oil. Add the onions and cook over low heat, stirring frequently until they are soft and caramelized, about 10-15 minutes. Set aside.

    Make the Smoked Tomato-Bacon Aioli

    In a bowl, mix together the mayonnaise, smoked paprika, garlic powder, and crumbled candied bacon. Adjust seasoning with salt and pepper to taste.

    Prepare the Patties

    Form the ground beef into two equal patties and season both sides with salt and pepper. In the same skillet, cook the patties over medium-high heat for about 3-4 minutes on each side until they are well seared and cooked to your desired doneness.

    Assemble the No7 Smash

    On the bottom half of the house bun, spread a generous amount of the aioli. Place the cooked patty on top, add a slice of provolone cheese, followed by the grilled green tomatoes, candied bacon, and caramelized onions. Top with the other half of the bun and serve immediately.
