Prepare the Green Tomatoes
Slice the green tomatoes into 1/2 inch thick rounds. Dip each slice into buttermilk, then coat with cornmeal, ensuring an even layer on both sides.

Cook the Green Tomatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Fry the coated green tomatoes for about 3-4 minutes on each side until golden brown and crispy. Remove from skillet and drain on paper towels.

Cook the Salmon
In the same skillet, add another tablespoon of olive oil. Season the salmon fillets with salt, black pepper, and cayenne pepper. Cook the salmon for about 4-5 minutes on each side until crispy and cooked through.

Prepare Crawfish
In a small pan, heat the crawfish tails over medium heat for about 2-3 minutes until warmed through. Season with a pinch of salt and pepper.

Serve
On a plate, place the crispy green tomatoes, top with the cooked salmon, and garnish with crawfish tails and pork cracklin’s. Serve with lemon wedges on the side.
