    Prepare the Beef

    Preheat your oven to 350°F (175°C). Season the wagyu eye of round with salt and pepper. Place it in a roasting pan.

    Roast the Beef

    Roast the beef in the preheated oven for about 1.5 hours, or until it reaches an internal temperature of 135°F (57°C) for medium rare. Let it rest for 15 minutes before slicing.

    Prepare the Chips

    While the beef is roasting, prepare your house chips. If making homemade chips, slice potatoes thinly, soak in water, and then fry until golden and crispy.

    Assemble the Sandwich

    On a slice of sourdough, spread mayonnaise and grandmomma’s mustard. Layer with lettuce, sliced roast beef, Swiss cheese, and top with another slice of sourdough.

    Serve

    Cut the sandwich in half and serve alongside house chips.
