    Caramelize the Onions

    Heat 1 tablespoon of butter in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    Prepare the Patties

    In a bowl, season the ground beef with salt and pepper. Form into two equal-sized patties.

    Cook the Patties

    In the same skillet used for the onions, add another tablespoon of butter. Increase the heat to medium-high and cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Assemble the Patty Melt

    On a slice of sourdough bread, spread a tablespoon of Sauce No. 3. Place a cooked patty on top, followed by a slice of cheddar cheese and a generous portion of caramelized onions. Top with another slice of sourdough bread.

    Grill the Patty Melt

    In the same skillet, add a bit more butter if needed. Grill the sandwich over medium heat for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Remove from the skillet, slice in half, and serve hot with your favorite side.
