Roast the Tomatoes
Preheat your oven to 400°F (200°C). Cut the cherry tomatoes in half and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 20 minutes or until they are caramelized and slightly blistered.

Make the Vinaigrette
In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of apple cider vinegar, 1 teaspoon of Dijon mustard, and 1 tablespoon of fresh tarragon (chopped). Season with salt and pepper to taste.

Assemble the Salad
In a large bowl, combine the salad greens, roasted tomatoes, sliced onion, cucumber, and radishes. Tear the fresh mozzarella into bite-sized pieces and add it to the salad.

Drizzle the tarragon-mustard vinaigrette over the salad and toss gently to combine. Serve immediately.
