    Prepare the Fries

    Wash and cut the russet potatoes into fries. Soak them in cold water for at least 30 minutes, then drain and pat dry.

    Fry the Potatoes

    In a large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt immediately.

    Make the Crab Butter

    In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Stir in the Old Bay seasoning and remove from heat.

    Combine and Serve

    In a large bowl, toss the fried potatoes with the crabmeat. Drizzle the garlic crab butter over the top and gently mix to combine. Garnish with chopped parsley and serve immediately.
