    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels. Rub the chicken all over with olive oil, then generously season with Cajun seasoning, salt, and black pepper.

    Sear the Chicken

    Heat a large cast iron skillet over medium-high heat. Once hot, place the chicken breast-side down in the skillet and sear for 5-7 minutes until golden brown. Carefully flip the chicken over.

    Roast the Chicken

    Transfer the skillet to the preheated oven and roast for 45-55 minutes, or until the chicken's internal temperature reaches 165°F (75°C).

    Prepare the Green Beans

    While the chicken is roasting, bring a pot of salted water to a boil. Add the trimmed green beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and set aside.

    Make the Garlic Mustard Sauce

    In a separate pan, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1-2 minutes). Stir in the cooked green beans and grain mustard, tossing to coat evenly.

    Once the chicken is done, let it rest for 10 minutes before carving. Serve the chicken with the sautéed green beans on the side.
