Prepare the Brisket
Season the brisket with salt, black pepper, garlic powder, and onion powder. Rub the spices all over the meat to ensure it's well coated.

Sear the Brisket
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet. Sear the brisket in the bacon fat for about 4-5 minutes on each side until browned.

Slow Cook the Brisket
Transfer the seared brisket to a slow cooker. Add the beef broth and crumbled bacon on top. Cover and cook on low for 8-10 hours, or until the brisket is tender and easily shredded.

Assemble the Sandwich
Once the brisket is cooked, shred it using two forks. Toast the sourdough bread slices, then layer the shredded brisket, provolone, Swiss cheese, crispy onions, and a drizzle of horseradish sauce on one slice of bread. Top with another slice to complete the sandwich.

Cut the sandwich in half and serve with additional crispy onions and horseradish sauce on the side.
