Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Separate Eggs
Separate the egg yolks from the egg whites. Place the egg yolks in a medium bowl and the egg whites in a separate large bowl.

Mix Egg Yolks and Sugar
Add the granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and creamy.

Combine Chocolate with Egg Mixture
Gradually fold the melted chocolate mixture into the egg yolk mixture until well combined.

Whip Egg Whites
Using an electric mixer, beat the egg whites with a pinch of salt until stiff peaks form.

Fold in Egg Whites
Gently fold the whipped egg whites into the chocolate mixture in three additions until no white streaks remain. Be careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Prepare Whipped Cream
In a mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream on medium-high speed until soft peaks form.

Serve
Once the mousse is set, remove it from the refrigerator. Top each mousse serving with a generous dollop of whipped cream. Optional: garnish with chocolate shavings or fresh berries.
