Method
Steak Preparation
- 1
Prepare the Steak
Remove the ribeye steaks from the refrigerator and allow them to come to room temperature for about 30 minutes before cooking.
- 2
Season the Steak
Generously season both sides of the steaks with salt and black pepper. Drizzle olive oil on both sides and rub it in along with minced garlic from the garlic cloves.
Grilling the Steak
- 3
Preheat the Grill
Preheat your grill to high heat (about 450°F to 500°F). You want it very hot to get a good sear on the steaks.
- 4
- 5
Flip and Add Aromatics
Flip the steaks and add the sprigs of fresh rosemary on top. Grill for another 4-5 minutes for medium-rare doneness.
- 6
Check for Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F to 135°F.
Resting the Steak
- 7
Rest the Steak
Once cooked to your desired doneness, remove the steaks from the grill and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.
