Preparing the Filet Mignon

Season the Steaks
Pat the filet mignon steaks dry with paper towels. Drizzle olive oil on both sides and season generously with salt and black pepper.

Sear the Steaks
Place the seasoned filet mignon in the hot skillet. Sear for about 4 minutes on one side without moving them, then flip and sear the other side for another 3-4 minutes or until the desired doneness is reached.

Rest the Steaks
Remove the steaks from the skillet and let them rest on a plate for at least 5 minutes before serving.

Prepare the Vegetables
While the steaks are resting, wash and trim the asparagus. Peel and slice the carrots into thin rounds. Chop the red bell pepper into strips and mince the garlic.

Cook the Vegetables
In the same skillet used for the steaks, add 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the asparagus, carrots, and red bell pepper. Sauté the vegetables for 5-7 minutes until they are tender-crisp.
