Marinate the Chicken
In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs and ensure they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Dredging Mixture
In a shallow dish, combine the all-purpose flour, cayenne pepper, garlic powder, onion powder, and sea salt. Mix well.
Fry the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it is fully coated. Carefully place the chicken in the hot oil and fry for about 6-8 minutes per side, or until golden brown and cooked through. Drain on paper towels.
Make the Dill Pickle Aioli
In a bowl, mix the mayonnaise, chopped fresh dill, and a pinch of salt. Adjust seasoning to taste.
Assemble the Sandwiches
On the potato bun, spread a generous amount of dill pickle aioli, add the fried chicken, top with dill pickles and mixed greens. Close the sandwich.
Serve with Fries
Serve the sandwiches with sea salt fries on the side.
