Prepare the Whipped Potatoes
Peel and chop the Yukon Gold potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add butter and heavy cream, then whip until smooth. Season with salt and pepper to taste.

Roast the Broccolini
Preheat the oven to 400°F (200°C). Toss broccolini with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes, until tender and slightly crispy.

Cook the Filet Mignon
Season filet mignon with salt and pepper. In a skillet over medium-high heat, add a tablespoon of olive oil and sear the filets for about 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

Make the Deburgo Sauce
In the same skillet, add beef broth, Worcestershire sauce, Dijon mustard, and fresh parsley. Bring to a simmer and cook for about 5 minutes, scraping up any browned bits. Adjust seasoning as necessary.

On each plate, place a generous scoop of whipped Yukon gold potatoes, arrange the roasted broccolini alongside, and top the filet mignon with the deburgo sauce.
