Prepare the Chicken

In a bowl, mix flour, cornstarch, baking powder, salt, black pepper, and paprika. Dip each chicken breast into the buttermilk, then dredge in the flour mixture until well coated.

Fry the Chicken

Heat vegetable oil in a deep skillet over medium heat. Fry the chicken breasts for about 7-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make the Waffles

In a separate bowl, combine waffle mix, eggs, and milk. Whisk until smooth. Preheat a waffle iron and pour the batter according to the manufacturer's instructions. Cook until golden brown.

Prepare Rum Butter

In a small saucepan, melt unsalted butter over low heat. Stir in rum and mix well. Remove from heat.

Serve

On a plate, stack a waffle and top it with a piece of fried chicken. Drizzle with rum butter and maple syrup before serving.
