Make the Biscuits
Preheat the oven to 450°F (230°C). In a large bowl, mix together flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden.

Prepare the Sausage Gravy
In a skillet over medium heat, cook the ground sausage until browned. Sprinkle the flour over the sausage and stir to coat. Gradually add the milk, stirring constantly until thickened. Season with black pepper and salt to taste.

Cook the Eggs
In a separate non-stick skillet, heat a little oil or butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.

Assemble the Dish
Split the biscuits in half. Spoon the sausage gravy over the biscuits and top with a sunny side up egg. Serve hot.
