1. Prepare the Filling
In a pan, heat 1 tablespoon of oil over medium heat. Add chopped onions and bell peppers, sauté until softened. Add the cooked chicken or beef, salt, and pepper. Cook for another 2-3 minutes, then remove from heat.
2. Assemble the Quesadillas
On one half of each tortilla, layer shredded cheese and the prepared filling. Fold the tortilla over to create a half-moon shape.
3. Fry the Quesadillas
In a large skillet, heat 2 tablespoons of oil over medium-high heat. Place the folded quesadillas in the skillet and cook for about 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed.
4. Serve
Remove from heat, slice into wedges and serve hot with salsa, guacamole, or sour cream.
