Prepare the Chiles

Remove stems and seeds from the guajillo and ancho chiles. Place them in a saucepan, cover with water, and simmer for 10 minutes until softened.

Make the Marinade

In a blender, combine softened chiles, minced garlic, cumin, oregano, vinegar, salt, black pepper, and olive oil. Blend until smooth.

Marinate the Pork

Place the pork chunks in a large bowl or resealable bag. Pour the marinade over the pork, ensuring all pieces are coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.

Cooking

Cook the Pork

Preheat the grill or oven to medium-high heat. Remove the pork from the marinade and grill or roast for about 20-25 minutes until cooked through, turning occasionally.

Serve

Let the pork rest for a few minutes before slicing. Serve with tortillas, onions, and cilantro.
