Prepare the Dough
In a large mixing bowl, combine the flour, baking powder, and salt. Cut in the lard or shortening until the mixture resembles coarse crumbs.

Add Water
Gradually add the warm water to the flour mixture, mixing until the dough comes together. Knead the dough on a lightly floured surface for about 5 minutes until smooth.

Rest the Dough
Cover the dough with a damp cloth and let it rest for 20 minutes.

Roll Out the Dough
After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball out into a circle about 1/8 inch thick.

Fry the Sopapillas
In a deep frying pan, heat oil over medium-high heat. Fry each dough circle until it puffs up and turns golden brown, about 1-2 minutes per side.
