    Prepare the Marinade

    In a large bowl, mix together the red chile powder, minced garlic, cumin, oregano, apple cider vinegar, salt, black pepper, and water to create a marinade.

    Marinate the Pork

    Cut the pork shoulder into large chunks and place them in the bowl with the marinade. Ensure the pork is well coated. Cover and refrigerate for at least 4 hours or overnight for best results.

    Sear the Pork

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear the pork pieces until browned on all sides, about 5-7 minutes.

    Simmer

    Pour the reserved marinade over the seared pork and bring to a boil. Reduce the heat to low, cover, and let simmer for about 2 hours, or until the pork is tender and easy to shred.

    Once cooked, shred the pork with two forks and mix it back into the sauce. Serve warm with tortillas or rice.
