Cook the Pork
In a large pot, heat olive oil over medium heat. Add the cubed pork shoulder and brown on all sides. Stir in the minced garlic, chopped onion, cumin, salt, and pepper. Pour in the adobo sauce and enough water to cover the meat. Bring to a simmer, cover, and cook for about 2 hours or until the pork is tender.

Prepare the Enchiladas
Once the pork is tender, shred it using two forks. Preheat your oven to 350°F (175°C). Soften the corn tortillas in a hot pan for a few seconds on each side. Fill each tortilla with shredded pork, roll them up, and place them seam-side down in a greased baking tray.

Add Cheese and Bake
Sprinkle the shredded cheese over the top of the rolled enchiladas. Bake in the oven for 20-25 minutes or until the cheese is melted and bubbly.

Garnish and Serve
Once out of the oven, garnish with fresh chopped cilantro. Serve hot.
