    Prepare the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 3-5 minutes.

    Combine Ingredients

    Add the canned black beans (drained and rinsed), cumin, salt, and black pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and let cool slightly.

    Assemble Empanadas

    Take an empanada dough disc, place a tablespoon of the bean and cheese filling in the center. Top with a tablespoon of shredded cheddar cheese. Fold the disc over to create a half-moon shape and crimp the edges with a fork to seal.

    Cook the Empanadas

    Preheat your oven to 375°F (190°C). Place the assembled empanadas on a baking sheet lined with parchment paper. Brush the tops with olive oil. Bake for 20-25 minutes or until golden brown.

    Once baked, remove from the oven and let cool slightly before serving. Enjoy your bean and cheese empanadas with your choice of dipping sauces.
