Preheat Oven
Preheat your oven to 350°F (175°C).

Prepare Tortillas
Warm the corn tortillas in a skillet or microwave to make them pliable.

Fill Tortillas
Spread a spoonful of enchilada sauce on each tortilla, add a generous amount of shredded cheese, some chopped onions, and a sprinkle of salt. Roll the tortillas tightly and place them seam-side down in a greased baking tray.

Add Sauce and Cheese
Once all tortillas are in the tray, pour the remaining enchilada sauce over the top and sprinkle with the remaining shredded cheese.

Bake
Cover the tray with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

Garnish and Serve
Remove from the oven and let it cool for a few minutes. Top with sour cream, chopped cilantro, and sliced black olives before serving.
