    Prepare the Carne Adovada

    In a large pot, heat olive oil over medium heat. Add the cubed pork shoulder and brown on all sides. Add onion and garlic, sautéing until softened.

    Add Spices and Sauce

    Stir in the adobo sauce, cumin, oregano, salt, and black pepper. Cover and simmer for 1.5 to 2 hours until the pork is tender and flavors meld, stirring occasionally.

    Cool and Shred

    Once cooked, remove the pot from heat and let the filling cool slightly. Shred the pork with two forks and mix it well with the sauce.

    Fill the Empanadas

    Preheat the oven to 375°F (190°C). Take empanada dough discs and place a spoonful of the carne adovada filling in the center of each disc. Fold over and crimp the edges to seal.

    Bake the Empanadas

    Arrange the filled empanadas on a baking sheet and bake for 20-25 minutes or until golden brown.
