Beans

Method

Preparation

  1. 1

    Prepare Beans

Rinse the pinto beans under cold water and soak them overnight in a large bowl with enough water to cover them by at least 2 inches.

  2. 2

    Cook Pinto Beans

Drain the soaked pinto beans and transfer them to a pot. Add 4 cups of fresh water and bring to a boil. Reduce heat and simmer for about 1.5 to 2 hours, or until the beans are tender. Add salt to taste.

  3. 3

    Prepare Chili Beans

In another pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Stir in chili powder and cumin, cook for another minute.

  4. 4

    Cook Chili Beans

Add canned chili beans (drained) to the onion and garlic mixture. Stir well and allow to simmer on low heat for about 30 minutes. Adjust seasoning with salt and pepper to taste.

  5. 5

    Prepare Refried Beans

In a skillet, heat olive oil over medium heat. Add cooked pinto beans along with some of their cooking liquid. Mash the beans with a fork or potato masher, adding more liquid as needed until you reach your desired consistency.

  6. 6

    Serve

Once all beans are prepared, serve them in a tray or individual bowls. Enjoy each variety separately or combine them for a delicious bean medley!
