Roasting the Yams
Preheat your oven to 400°F (200°C). Peel and cut the yams into uniform cubes. In a large bowl, toss the yams with olive oil, salt, and black pepper until evenly coated. Spread them in a single layer on a baking sheet.

Roast the yams in the preheated oven for about 25-30 minutes, or until they are tender and golden brown, tossing halfway through for even cooking.

Prepare the Sauce
In a separate bowl, combine the lemon curd, mascarpone cheese, walnut Dijon mustard, and truffle oil. Whisk until smooth and well combined.

Once the yams are roasted, remove them from the oven. Serve the yams warm, drizzled with the creamy sauce, and topped with grapefruit segments and chopped pistachios.
