Prepare the Mole Sauce

Soak the Chilies

Remove stems and seeds from the ancho chilies. Soak them in hot water for 15 minutes until softened.

Blend the Mole

In a blender, combine soaked chilies, garlic, onion, canned tomatoes, chicken broth, cinnamon stick, and sugar. Blend until smooth. Pour into a saucepan and simmer for 20 minutes. Season with salt to taste.

Prepare the Plantains

Slice and Grill

Peel the plantains and slice them diagonally. Heat olive oil in a skillet over medium heat. Add plantain slices and grill until golden brown on both sides, about 3-4 minutes per side.

Cook the Steak

In a skillet over medium-high heat, add ground hanger steak and taco seasoning. Cook until the meat is browned and cooked through, about 5-7 minutes.

Assemble the Tacos

Build the Tacos

Warm the corn tortillas in a dry skillet or microwave. Fill each tortilla with the seasoned beef, top with grilled plantains, and sprinkle with parmesan cheese. Drizzle with mole sauce before serving.
