Cooking Instructions

1

Prepare the Plantains

Peel and slice the plantains into 1/2 inch thick pieces. Heat olive oil in a skillet over medium heat. Fry the plantain slices until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels and sprinkle with salt.

2

Sear the Scallops

Pat the scallops dry with paper towels and season with salt and black pepper. In the same skillet, add butter and melt over medium-high heat. Once the butter is hot, add the scallops and lime zest. Sear for about 2-3 minutes on each side until they are golden brown and cooked through.

3

Prepare the Dates and Orange

While the scallops are cooking, chop the organic dates and segment the orange. Set aside.

4

Make the Sauce

In a small saucepan, melt the remaining butter over low heat. Stir in the Dijon mustard until well combined. Remove from heat.

5

Plate the Dish

On a serving plate, arrange the fried plantains, seared scallops, chopped dates, and orange segments. Drizzle with the buttery Dijon mustard sauce and top with gourmet dark cherry balsamic dressing.
