Sear the Scallops
Pat the scallops dry with paper towels and season with salt and black pepper. In the same skillet, add butter and melt over medium-high heat. Once the butter is hot, add the scallops and lime zest. Sear for about 2-3 minutes on each side until they are golden brown and cooked through.
Prepare the Dates and Orange
While the scallops are cooking, chop the organic dates and segment the orange. Set aside.
Make the Sauce
In a small saucepan, melt the remaining butter over low heat. Stir in the Dijon mustard until well combined. Remove from heat.
Plate the Dish
On a serving plate, arrange the fried plantains, seared scallops, chopped dates, and orange segments. Drizzle with the buttery Dijon mustard sauce and top with gourmet dark cherry balsamic dressing.
